In the American tradition, there are four prominent BBQ regions: Kansas City, Carolina, Memphis, and Texas. These four barbeque styles represent the most recognized regional renditions of smoked meat. You’ll find each style's techniques, rubs, and sauces copied across the U.S. From their cuts of choice to their sides. Look up the 4 regions of BBQ and what makes them so different.

"Flat" shrimp is typically referred to as butterfly shrimp. It is completely normal shrimp that has a cut made down the middle to allow the meat to be spread which results in a larger surface area (and a larger appearance on the plate). Some restaurants do it to make you think you are getting more. Some do it so there is more breading per shrimp. Some do it because it cooks faster which can change the eating experience.

Hey guys, I love you two! I've been watching your travels for a while. I'm from Lexington and appreciate your trying our regional fare. I worked my way through high school and college working at Jimmies bbq, which closed a few years back. We called the red slaw, bbq slaw, and the vinegar sauce is called dip, not sure who came with that name. But it looks like you two enjoyed your meal! Keep posting! I love your take on life!!

LOL, sure sounds like Peach Toddlers and Cheese Turds. If that is what you actually said, then it is really Peach Cobbler (like the shoe maker) and Curds. Oh, and the topping on the pie is Meringue which is made with egg whites and sugar. I am not a fan and prefer whipped cream, but we all have our own way. I am a slaw on the sandwich type of guy.

I used to travel to Texas for work a lot and I love brisket. So I have to disagree with Lexington being the BBQ capital of the US, let alone the world.
The topping on the chocolate pudding pie looks like meringue, which is made from egg whites and sugar which are whipped with a mixer and then put into the oven to get the brulee look and taste. A lot of pudding pies in the US, chocloate, lemon, and banana use it as a topping instead of whipped cream and I much prefer it over whipped cream, especially if it is that thick.
