I go ahead and skewer the picanhas so they are ready to season and grill straight out of the package, cut Brazilian style.
For the center cut, I do the 1/3-2/3 cut, and clean off the silverskin vein in between. The 1/3 is used for thick cut (~1 3/4") baseballs, very tender. The 2/3, larger but thinner (~1") center cut steaks.
I grind as little sirloin trim as possible, it's more valuable diced into kebab cubes. What is ground is packaged distinctively as "ground sirloin", and priced at a small premium.
Normally I use just Select grade and it give very satisfactory results, and I usually get it locally at about $4.25 a pound. Top sirloin gives one of the best markup ratios of almost any subprimal.
