One thing I've found lately with some of these larger cuts of meat is to spend some time trimming off all external fat, silver skin, etc. prior to applying the rub. It's the internal fat that gives the meat its tenderness and juiciness... Removing the external fat, etc. allows the seasoning, rub, etc. to better flavor the meat...

Excellent tutorial on a piece of meat many of us would be fearful to try! βWell doneβ! I freeze portions as you do with Costco 2-pack pork shoulder. So convenient having good meat ready to eat.
