There are two grains that are pretty under utilized in the distilling world: sorghum and millet. Both have high amylase content and are used to make beer in their native home in Africa. Sorghum stalks when green can also be juiced to make a sugar cane like juice which you could ferment out to make a temperate version of aquardiente. Any of these would be a cool distillation.
