I haven't tried these retail essences and I'm unlikely to in the future. I do, however, enjoy trying my own natural flavor adjustments, switching or combining woods, adding vanilla bean, cinnamon, clove in very small quantities to an aging jar. I plan to try some dark caramel in the near future. I have a Ten-30 barrel (wine cask wood) soaking in a little sherry to be used in a future single malt.

I have a question, what do you do with the things you make that doesnt turn out great?
Because I have been playing around with a bunch of spiced rum and a thing that I like to call Rumaretto. And they are all kind of nice, but not great. It often turns out a bit to sweet.
My thoughts with it, is that if I dont like the different spiced rums and what not, was to chuck it back in the still with my next rum run, thinking that since its spiced it might bring some interesting flavours to a new rum destillate, but then again I am a bit worried that it might mess things up. And it would be a real shame to ruin stripping runs from 110 liters of rum wash with some shady basement spiced rum :D
Any thoughts?

Glad to see you mix them together at the end. That has been the thing that I am always saying to the screen on many of your videos and how all the big boys do it. Take the flavor notes for all of your bottles, pick out interesting flavors, and blend those combinations. Got something with too much of a single flavor? Use a little of it to punch up that flavor in other things that lack it. The blending is the leg that almost no channel ever talks about or shows, but is the key to getting the best results.
