When running twin motor setup in any electric vehicle including rc cars, you should set your ESCs to current mode rather than target speed mode because in target speed mode the motor that kicks on first will do all the work.
In the best case you would synchronize the ESCs together with something like CAN bus.

3:52 There are company's out there (like Boco bearings) that make ceramic bearings for RCs.
They last longer, but also ceramic produces a lot less friction and heat, which makes them 10x more efficient over steel bearings and would help a lot with higher speeds and durability👍

Your best bet is probably to call MGM. Their ESCs are the best you can get, but sometimes having a ton of options makes things more confusing before it gets easier. They're great people to deal with. I'd give them a ring and a chance.
