As someone who grew up with pho being a regular dish in the home I had to laugh because you are right about not adding sauces right away. I always add things to my pho but I remember my mom always scolding me to try the soup first! My preference is for the beef balls without the added tendons. A great street food is to fry the beef balls and brush on sweet chili sauce. Love your content and love seeing you enjoying food.

❤ Here's my little journey with this kickass soup. I essentially had takeout chicken pho for as long as I can remember, from a singular restaurant in my city, when there was nothing for dinner at home and especially everytime I got sick (which was a LOT of times lol). Dad knew the owner and it was a common lunch spot for him and his coworkers, there was no widespread internet to look up places so you just knew them by word of mouth. And he always brought home chicken for me and beef for himself. I got so tired of it eventually, especially since the broth was kinda watery and chicken dry as hell. But I always shunned beef pho for the chicken, which my real crime was not appreciating as a kid.
Then I didn't eat pho for years until I started college and I had gotten myself more open-minded to foods. When my parents brought home pho from a newer Vietnamese restaurant, I made mini bowls of both the chicken and beef. Completely blown away by the soothing broth and all the hearty meats and noodles. They even put fried crispy onion on top of their chicken pho. I was an idiot to judge pho by one repetitive childhood experience, from a probably midtier restaurant. Now it's one of my ride or die foods, even chicken pho of course. If I got sick now though, pho is literally one of the first things I crave - good thing I love it now 😂
