a lot of achievements i see nowadays go like this
-achievements you get by completing required missions, bosses, etc.
-doing something thats semi interesting or goofy
- complete EVERYTHING as PERFECTLY and as FAST as possible without a SINGLE mistake
-do a single mediocre task for 6 hours straight until youve done it enough

Let's be fair to Breath of the Wild, Nintendo NEVER intended for players to collect all 900 seeds (this was literally said in an interview). The abudance of seeds was made simply to cause the player to stumble across them constantly throughout their playthrough to level-up their inventory. It was actually a rather genius way of setting up a "pay to level-up" system in an open world game. You only need about a 1/3 of the seeds to level up your whole inventory anyway.

For me, it depends on the game, but there's a very small handful of games I've 100% completed on Steam. Probably my favorite implementation of achievements is probably in Plants vs Zombies, because it's not really a grindfest, but more so, challenges that make the game a little bit harder that you're unlikely to try in normal gameplay.

I stopped caring about being completionist on achievements once there was ones for completing the game on each difficulty level, which was very quickly after they started being a thing. I am not replaying a game on the hardest difficulty if the game didn’t grab me enough to want to replay it ever again in the first place on normal difficulty. And once one game destroyed my interest in that, all the rest followed soon after. My absolute favorite game achievements are ones that popped up for you doing something funny you weren’t expecting achievements for, because it showed that the game devs were self aware and knew what game they were making and for what gamers. There is nothing quite like throwing a can in someone’s face and hearing that “Do-Doo!” Achievement unlocked.

Achievement hunting has changed from 'we want you to see all the cool aspects of our game' to "we want you to spend the rest of your life playing our game' - it wasn't a good change
