This sauce is bursting with life and makes everything taste better.
The saucery takes place in a two-stage process. First, we make koji by introducing a specialised fungus to rice (koji is ancient fermented food that forms the basis of miso and soy sauce). We then add the koji to a brine containing chipotle chillies, onions, and garlic, where it undergoes a lacto-fermentation (the process that creates ferments like sauerkraut and kimchee). The result is a versatile sauce with rich, umami flavours. We use it in and on everything from eggs, sandwiches, tacos, soups, pasta sauces, stocks, and as a base for a devastating chipotle mayonnaise.
Sheldrake & Sheldrake Fermented Hot Sauce arose when me and my brother Merlin met Jonathan Hope, a koji wizard and director of Kultured London, a company specialising in making miso from local ingredients. The sauce combines our trusted formula with Jonathan's koji.

To create this video, we exploded bottles of hot sauce with detonating charges, filmed the explosions from behind a safety screen in super slow motion, and played the videos backwards.

I bought some immediately after seeing this and just received it. Being in the States it took a while, and at Β£21 it better be good, right? Well it is.
It's slightly smoky, probably from the Chipotle peppers. There's a faint faint heat that catches in the back of your throat, but that may be as much from the vinegar as anything else. You can tell there's garlic in it, but it isn't prominent. And there's a taste in there, I can't describe, probably from the shio koji, that I think I've only ever tasted in kimchi before. It's delicious, and could be used on a variety of foods. And even though it's not that hot, I find my nose opened and, extremely oddly, a faint sweat on my brow, but that could also just be Florida.
