12:58 YES!!!! This part is my favorite scene and why I have eagerly awaited the new upload to the Mr. Z in Korea series weekly. Last week, I commented that Mr. Z isn't just intrigued by the flavors. He's also carefully tasting and deciphering the different ingredients and combinations that create the flavors and at the same time he's also processing what other combinations he can create with the ingredients and flavors. This is why he insisted on trying the ginseng extract and Achim Hetsal at the bar (Where Josh surprised him with a trip to Korea), suggested the caviar with the Gimbap and syringe injection of tteok-bokki sauce, added the kimchi and bossam to the broth (last week), and suggested the Soju mix with the naengmyeon in this vid. As a home cook and one who enjoys food and food flavors, I definitely try to do the same thing, but with Mr. Z being the caliber of chef that he is, I knew his flavor insights would be next level. It's a great series can't wait for next week.

This is so amazing to watch. Seeing a master class chef being so astounded by the quality of the food, and the being surprised by the flavours of meats he has tried thousands of times in his life, is just incredible. and on top of that, he still tries to experiment on his own, while trying these out. It shows his expertise, when he can just tell that the soup would work well together with the soju. And he is so excited to share his creations with the other chef as well.
This might have been my favourite episode of the series so far.

I literally could not stop smiling ear to ear while watching. Seeing Josh have a food ecstasy is nothing new, but seeing Mr. Z showing such a pure, euphoric reaction just brings such joy. And let’s not understate just how much that also means this restaurant’s food was just god tier. I don’t know when I’ll ever visit Korea again, but this place has just became a bucket list restaurant.

Wow. The chef was literally customizing every bite!
And can I just say, I love the level of expertise that Mr. Z is bringing to the table. It would be amazing if you could bring more experts on their fields to experience the counterpart in Korea, like when you brought Maj. Charles to the military
