Most of the weird foods in this video at least I can see happening out of desperation or accident. Maggot cheese? You leave it out too long, it can happen. You get stuck in a siege and compounded by the fact Sardinia is an island, what are you going to do? Get more cheese? Makes sense.
Shark fin soup. You live in a fishing village and 80+% of your diet comes from the ocean? Yeah, make the bones and fins into a nice stock, why not?
The Ackee. The prepare right or die thing is common in legumes. For Example, if you donât clean off all the non-nut matter, cashews are violently poisonous. Another example is if the cooking heat isnât high enough, kidney beans are lethal.
Bird's nest soup. Same thing with the maggots and cheese. It originated as a famine dish. Hard times and you try to eat anything you can.
The fact that the Ortolan is made with expensive alcohol and has a built-in shame mechanic means the French knew what they were doing, had a choice, and did it anyway.

Shark fin harvesting is actually worse than is explained here. They are caught, the fins are cut off of the living shark, and the quadruple-amputee shark is thrown back in the water, still alive.
