Aight boys, not to brag but I'm a kitchen gremlin, and last summer I fucking CARRIED my local popeyes working back of house. I'll give you the krabby patty secret formula.
Both batters are from powder, but you can recreate it with an egg wash seasoned with salt, pepper, paprika, and a smidge of cayenne pepper for the bone in and tenders batter.
The sandwich/nugget batter is buttermilk egg wash seasoned with dill stems, salt and pepper.
Dredge for bone in in salt and peppered 80/20 flour cornstarch mix
Dredge for the sandwich and nuggets is 70/30 flour to cornstarch with salt and pepper.
Deep fry at 350 in beef tallow for 12 minutes, stirring at the 6 minute mark for bone in
3 minutes for tenders
6 and a half for the sandwich fillets.
Use this knowledge for good.

One time I got a strep throat and my family had to go do errands while I stayed in the house watching the prisoner of Azkaban and sleeping, feeling miserable and then my parents bought home Popeyes chicken.
