110-115 ā rare
120-125 ā medium rare
130-135 ā medium
140-145 ā medium well
150-155 ā well done

1. Let prime rib come to room temperature 45 min before cooking.
2. Pre-heat oven to 350 (325 convection) degrees.
3. Season and/or dress your roast. (see individual recipes above.)
4. Fill bottom of a roasting pan with Ā½ - Ā¾ rock salt; set roast on bed of salt [This was my Grandpa Waltās method, and my dadās recipe.] or catch dripping in a pan to make Au Jus/Gravy.
5. Cook roast in oven until desired temperature is reached. (see chart below.)
6. Remove from oven, cover and let rest for 15-25 minutes.
RECIPES:
PRIME RIB TWO WAYS
Ingredients:
Prime Rib Roast
Rock Salt ā 1-2 boxes (labeled as āice creamā salt)
PESTO CRUST:
15 cloves of garlic
1 heaping cup mixed herbs ā rosemary, sage, chives, oregano (optional: cilantro, basil, thyme)
2 Tbsp peppercorns
2 Tbsp salt
Ā¼ cup horseradish ā prepared
Ā¼ cup olive oil
Pulse all ingredients in food processor until well combined. Smear on top of prepared roast.
GARLIC STUFFED:
15-20 cloves of garlic
olive oil
Ā¼ cup favorite meat seasoning
Poke 15 or more 1ā deep holes in top of roastās fat cap, and stuff with garlic cloves (halve them if they are too large). Rub roast with seasoning. Cook as directed.
