Fhonestly, the crab should have been processed to matchwith the texture of the milk bread, not just a lump. the milk bread should have been coated as to balance out the milky bread and desired crunch. Quenelle for either eating the toast in bits, or in one whole nine, doesn’t work. It’s a quenelle, unless you are expecting the leeks to be saucy enough that when the quenelle collapses it coats and hence promotes the other flavors.
