The theory for endermen with the most backing is that they are the ancient builder that had fled to the end. Why did the flee? Because steve, who had apparently been around that time tried experiments at that time accidentally created the wither. This wither was absolutely massive and went on a killing spree. (Before anyone says why they didnt stay cuz they should be able to respawn just read the endermen theory and ill explain the steve theory corelating to this *steve is basically you, the player*)
While trying to spree they went to the end. They survived there eating the fruits, and trying to defeat the pesky ender dragon but the but then came the endermites. The endermites did exactly what a parasite would do. Latch on to the host and slowly invade them. They then mutated into the endermen because of that and sufferee under the ender dragon's rule. The reason why endermen attack endermites is because of their human side defending the little bit of "humaneness" they have. As to why they attack steve theres 2 reasons. 1 is cuz its the endermite in them attacking the human to make more endermen. The 2nd one is because its the human part of the endermen angry as it is steve's fault that they became monsters.

Now for steve (aka you). Steve was gonna be the last to escape but he died. The gods refused to take him and decided to let him respawn. Respawn and fix what he did. Which is why when you finally kill the dragon you get the achievement of freeing the end. Basically freeing the endermen from the enderdragon. And then theres this message of 2 ppl talking saying how you didnt give up and bla bla bla. Then you pretty much respawn and get a new life continuing this.

Now for why the wither is so small is because he wither split itself up and made wither roses and wither skeletons. Basically the wither that we have rn is just a part of the huge one in the past (an example is basically voldemort and his horcruxes)
