If you ask me, this hog wash is THE perfect ingredient list for a simple, yet phenomenal sauce.

I eat oysters every time I’m at a restaurant for appetizers, goes amazing with an ice cold Mexican beer. I put hot sauce, horse radish, lemon juice . Would love to try the hot wash!

I loved Hog Island Restaurant in San Francisco. We had to go back a 2nd day.
Elliot's in Seattle was the best of 3 restaurants we went to last week, Oysters EVERY night.

I can't eat oysters due to allergies. With that being said, I subbed to your channel solely because your videos are soothing. Also I learn something knew, perhaps to share with my mates who do eat oysters, crab etc.

West coast oysters do taste different than east coast oysters! The west coasts waters are more abundant with plant life. So the oysters will have more vegetal tasting notes. Some have very forward melon/cucumber notes on the smell and taste.

Can I recommend a spicy seafood sauce? Blend 2 garlic, 4-5 thai chilis, cilantro, Thai basil, salt, msg, lime, and a little bit of fish sauce. It’s very delicious when it’s spicy, sour, and basil-y.

West coast farms oysters primarily IN the water column, east coast we mostly do bottom grown which I think give better flavor, but I am an East coast farmer tho so take that as you want

Lime a dash of Chileritos chamoy and tajin. Salt to preference.

Yea, being from the north east and having lived out west, we win oysters out east, they win crabs out west. I think they are winning.

I grill them with butter lemon and tapatío. I’ve added cilantro and it’s good but necessary.
