Ingredients: (Recipe is doubled- Yields 24 muffins)
Also shout out to ‪@SallysBaking‬ for the recipe! We use her recipes almost always when baking. Followed this one almost to the T.

-3 cups or 375 grams of AP flour-2 teaspoons baking powder-2 teaspoon baking soda
-1 teaspoon salt
-2 teaspoons ground cinnamon6 to 8 mashed bananas or 690 grams (used thawed frozen in this recipe)
-3/4 cup or 170 grams of unsalted butter (I used coconut oil) Not shown in video but added with wet ingredients)
-1 1/3 cups or 270 grams of brown sugar (I used coconut sugar)
-2 large eggs (room temp)
-2 tsp vanilla extract

-On medium speed (if using a kitchen aid/handheld mixer) combine bananas, eggs, vanilla extract, coconut oil, and coconut sugar). Can use a large bowl and whisk if you do not have a mixer!
-In a separate bowl, whisk together the dry ingredients (flour, baking soda, baking powder, salt, and cinnamon)
Combine and mix dry ingredients with wet ingredients.
Pour batter into muffin tins, filling to the top.
-Bake in oven 425 degrees for 5 minutes.
While still in oven reduce temperature to 350 degrees and cook for an additional 16-18 minutes.
