Curly Lasagna with Leftover Roti

Ingredients (सामग्री):
For the Veggies:
2 tbsp oil (तेल)
3-4 garlic cloves, minced (लहसुन की कलियां, बारीक कटी हुई)
1 small onion, finely chopped (प्याज, बारीक कटी हुई)
1 cup mushrooms, boiled and chopped (मशरूम, उबले और कटे हुए)
1/2 cup paneer cubes (पनीर के टुकड़े)
1 small carrot, finely chopped (गाजर, बारीक कटी हुई)
1/2 cup corn (मकई के दाने)
Salt to taste (स्वादानुसार नमक)
1 tsp Italian seasoning (इटालियन सीज़निंग)

For the White Sauce:
2 tbsp butter (मक्खन)
2 tbsp maida (मैदा)
1 cup milk (दूध)
Salt to taste (स्वादानुसार नमक)
1 tsp Italian seasoning (इटालियन सीज़निंग)

For the Red Sauce:
1 tbsp butter
3-4 garlic cloves, minced
Salt to taste
1 tsp Italian seasoning
1/2 tsp red chili powder (लाल मिर्च पाउडर)
1/2 tsp black pepper powder (काली मिर्च पाउडर)
1 cup tomato purée (टमाटर की प्यूरी)

Assembly:
4 leftover rotis (बची हुई रोटियां)
1 cup mozzarella cheese, shredded (मोज़ेरेला चीज़, कद्दूकस की हुई)

Method (तरीका):

1. Heat oil, sauté garlic, add onion until translucent. Add mushrooms, paneer, carrot, corn, salt, and Italian seasoning. Cook briefly and set aside.
2. In the same pan, heat butter, add maida, cook until golden. Gradually add milk, stir continuously, season with salt, Italian seasoning, and cook until thick.
3. Heat butter, sauté garlic, add salt, Italian seasoning, chili powder, black pepper, and tomato purée. Cook until thick.
4. Layer red sauce, folded rotis, veggie mix, white sauce, and mozzarella in a pan.
5. Cover, cook on low for 10 minutes until cheese melts. Serve hot.
