- freshly rendered lamb suet (tallow),
- dry aging ribeye and leg of lamb,

- insulin 🤩.

Charcuterie board idea: Thinly sliced, dry aged ribeye. This one has aged for about two weeks.

Today's dinner is a 1 pound dry aged ribeye. Dry aged for 8 days in the refrigerator. The salt flakes are for decoration only because the meat already contains salt from the curing process.
