Wagyu is a premium type of beef originating from Japan, known for its exceptional marbling, tenderness, and rich flavor. The word "Wagyu" literally means "Japanese cow" (with "wa" meaning Japanese and "gyu" meaning cow). There are several breeds of Wagyu, but the most famous is the Japanese Black, which is the primary source of the highly prized Kobe beef.
What sets Wagyu apart is its high intramuscular fat content, which creates fine marbling throughout the meat. This fat melts at a lower temperature than other types of beef fat, giving Wagyu its buttery texture and deep umami flavor.
