I use Famitracker for my 8-bit stuff (this wasn't always the case, however). I also use FL Studio, paired with various William Kage soundfonts for my SNES music and Cinos Modnar's Mega Drive soundfont for my Genesis music.
I also sometimes use Finale 2014 for notation.
