My first-ever taste of fry popcorn chicken was during my visit to Bangkok, Thailand in the year 2001, even before KFC Malaysia advertised this product. I was so impressed with the idea and the convenience of this product besides being tasty and flavourful.

Over the years I have searched and tried to get a unique flavor of my own, today I m here to share my special spices combination for this flavourful recipe, which you will enjoy the popcorn chicken from the bite without requiring any dipping sauces or ketchup.

It is near the Christmas festive season and baking some delicious cookies for friends and family is an ideal festive gift. Though it is time-consuming but is worth it. The tenderness of cookies is suitable for any time of the day.
Here is a recipe with one single cookie dough you can make into 4 different types of cookies. Time-saving and efficient.

RECIPES BELOW:
INGREDIENTS
1 butter (225g)
1 cup of brown sugar (improve the moisture content in the cookies)
½ cup of white sugar (improve the external structure hold and slight crunch on the surface)
2 eggs(A size)
1½ cups self-rising cake flour
1½ cups All Purpose flour (a.k.a AP flour)
1 teaspoon Corn starch
1 teaspoon salt
¾ teaspoon baking soda
1 – 2 teaspoon vanilla extract (for peanut butter cookies)


Notes:
A few extra steps needed proper attention to obtain nice flavourful cookies:
1. Butter and eggs need to be at room temperature. If they are kept in the fridge, thaw them at least 1 hour before starting the process. This is to ensure the egg and butter will be able to incorporate evenly without splitting/separating. If not, your cookies will have a layer of oil surfacing on top after baking while the entire cookie is soft and formless.

2. While whipping butter and sugar (either with a machine or manually), do spend sufficient time (at least 10 minutes to whip by machine) until the butter and sugar are well mixed. The mixture should be lighter in color and creamy texture. This will ensure the cookies are well moist and crumbly with bite.

3. While adding eggs into butter and sugar (ready mix in step 2), add in one by one. Once the first egg is well mixed in with the butter, then only add in the 2nd egg. Mix the butter, sugar, and egg well is the key (around 1 – 3 mins) but do not overwhip too.

4. All cookie doughs (after adding flour and flavors) are encouraged to keep in the fridge overnight or for at least 3 – 6 hours. This will enhance the cookies' flavor and allow the cookies to have an even temperature, much easier to bake.

5. Baking time for cookies varies according to cookie size. Smaller cookies require lesser time and vice versa. The overall baking temperature is 375F (190C) and the time range is around 13 – 14 minutes for a size of 40g – 50g.

6. Once the surface of the cookies begins to crack and the edge is slightly brown, then it is ready to be removed from the oven. Cookies directly out of the oven are very soft still and tender. Therefore, REMEMBER to leave it to cool down sufficiently (at least 30 mins) before moving them for its texture is more firm.

7. Cookies can be kept for 2 – 3 weeks in the fridge without a change of taste and can be kept in the fridge for a 1-month plus.

These are my favourite Penang Food and must-have every time I visit the island: Penang Asam Laksa, Deep Fry popiah (awesome to eat with laksa) and the Chai Kuih (菜粿). This shop prepares the best according to my taste. Have you try before and what do you think about it?
