Ducana is a sweet potato dumpling that is often eaten with salted fish in the Caribbean. Honestly, I could eat this anytime. It would make an amazing oats breakfast alternative or a healthy vegan dessert.
And if you're in the pumpkin spice fall mood, you can always sub out the spices for good old pumpkin spice
Makes 8 servings
Ingredients:
3 cups/1.5 lbs/675g Grated Sweet potato
1.5 cups/150g Grated fresh coconut
1 cup/120g AP flour
0.5 cups Brown sugar
2 tbsps Butter/coconut oil (add more for added richness)
1 tsp Vanilla paste
1/4 tsp Cinnamon powder
1/4 tsp Ground ginger powder
1/8 tsp Nutmeg
Pinch of Salt
Combine all your ingredients and wrap them in banana leaves or aluminium foil.
Bring a pot of water to a boil and drop the packets. Let them simmer for 30-45 minutes depending on how firm you want the dumplings.
Set aside to let them cool and eat at room temp.
Note: To disinfect banana leaves, rinse with water and heat them over an open flame. This also helps make them more pliable so they don't break when you're wrapping the dumplings.
And as always, if you love coconut, add more coconut, if you want it sweeter add more sugar. You can taste the mixture before boiling and adjust it to your preference
Some recipes add raisins.

🇩🇿 Algerian Spicy dish from Bousaada region called Zviti 🥘
Zviti also called Slata Mehrez ( literally means the mortar salad), is an Algerian spicy dish that is originally from the region of Bou Saada( M’Sila province).
This dish is made of a semolina galette called Rakhssas or Rakhssis (Arabic رخسيس orرخساس), that is cut into small pieces and crushed in a tall wooden mortar called Mehrez along with the grilled peppers, tomatoes and more ingredients.

Albanian Tavë Kosi Traditional Recipe
Tavë Kosi is an Albanian dish of baked lamb and rice. The lamb is first boiled or sautéed until tender. It is then covered with a yogurt sauce along with cooked rice then baked.
Tavë means casserole and kos means yogurt. The ingredients used to make this dish are very simple and easily found in any household pantry, except for the lamb perhaps. The lamb can also be cooked by grilling before baking. Cooking the lamb twice ensures that the meat becomes very tender.
Origin and Cultural Significance
Tavë Kosi is thought to have originated during the Ottoman rule as way to reuse yogurt after it had been used to marinate lamb and left-over lamb pieces. Marinating lamb in yogurt is an old practice.
Tavë Kosi is also called Tavë Elbasani after the Albanian city of Elbasan where the first proper recipe came from. It is a staple in Albanian households. For Albanians living abroad, Tavë Kosi is comfort food.
