I had no plans for cooking tonight. It was supposed to be a laid-back Saturday night. I put in an express delivery order at Walmart to throw some burgers and hot dogs on the Foreman grill but the order was delayed. I had no other choice but to throw something together last minute and this is what I came up with, and I am so glad I did!
It is always these impromptu meals that come out so delicious and so here is my recipe for you to try it at home. Sorry about the presentation here are the ingredients:
Cheese Tortellini (24 oz. package)
1 chicken breast (slice or dice)
1 can mild Rotel diced tomatoes
2 tablespoons olive oil
2 tablespoons sour cream
1.5 tablespoons tomato pesto
Salt and pepper to taste
2 cups baby spinach
½ tsp garlic paste
½ tsp dried basil
½ tsp oregano
1 In a pot bring four cups of water to a boil.
2 In a large skillet on low to medium heat add the olive oil and chicken cook the chicken until browned on all sides.
3 Add salt, pepper, garlic, pasted, basil and oregano and cook for 30 seconds.
4 Add in diced tomatoes, tomato pesto, and sour cream stir well and incorporate all ingredients keep the heat to low.
5 Add tortellini to the boiling water and cook for about 2 to 3 minutes DO NOT OVER COOK, while the tortellini is cooking add the spinach to the skillet with the other ingredients until they wilt, add in the cooked tortellini and toss all of the ingredients together. Serve immediately.
6 Optional grate some fresh parmesan cheese.
