On a very basic level, “interesting” means that the person observing whatever the subject is, wants to know more about whatever it is. But there are lots of more idiomatic usages of the term “interesting,” and if the questioner felt the need to ask about this phrase, I suspect it’s because they sensed that a more subtle or involved definition must have been intended by who ever said “interesting facts.”
For example, in many murder mysteries, the star detective will be said to get a gleam in their eye, and speak of “interesting facts,” and what the detective actually means, is that the facts are SUSPICIOUS, or that they may point to a way to solve the crime. Not that they are by themselves, “interesting” in the basic meaning of the word.
