should i post recipes? these were made with pioppino, oyster, and maitake mushrooms, each wing had a slightly different flavor 😋
This recipe:
start by cutting the dirt from the bottom of the mushroom clusters off, i like to use clusters of mushrooms rather than indiviual, it gives the wings more of a meaty bite and more variety in the texture
drop the clusters in batter and cover then drop in breadcrumbs, then deep fry or fry in a pan with at least an inch or more of oil, (i use virgin coconut oil very cost effective and good for you) on medium high heat, until dark brown and crispy about 10-15 minutes
i like to set the cooked wings out on a plate with a paper towel to collect the extra oil
then make bbq sauce in an oiled pan, heat until sugar is dissovled then add parmesan and toss wings with heat off until wings aee covered in sauce, the crispy fried batter will abosrb the sauce like a sponge
Wet batter:
flour
water
tsp paprika
tsp black pepper
tsp salt
BBQ sauce:
quarter cup sugar
2 veggie bouillion cube or tsp salt
quarter cup vinegar
splash of soy sauce
splash of worstechire suace
tsp nutritional yeast
half tsp paprika
Cashew parmesan:
(in food processor)
half cup cashews
1 tsp salt
1 tsp garlic powder
3 tbsp nutritional yeast
