This is one of those seafood dishes that make you want to slap…you know the rest 😂 The homemade butter sauce was created with slow simmered orange juice, garlic butter, fresh cilantro and a host of seasoning and spices. Honestly, the sauce is surely a keeper!!!

Happy Friday Everyone! I want to share with you a super easy and delicious 10 minute meal idea.
Shrimp fried rice is the feature for today. I decided to put two day old rice to use for this quick fix.
If you are not a fan of shrimp, this non traditional method can be substituted with other proteins or simply vegetables only!

Look at that. This is not a traditional macaroni and cheese. We finally made our version of a crawfish mac and cheese! When I tell you my phone has been ringing on a daily basis for another taste of this deliciousness! I told myself, it’s only fair that I share the recipe with all of you.
If crawfish is not for you, simply create another version of your liking. Macaroni and cheese can be served as a side dish or a complete meal with a variety of different options.
I’m a huge fan of crawfish which is why I made sure this dish was full of a wholesome amount of crawfish. The homemade roux and freshly grated blended cheeses, peppers and spices created the perfect cheese pull!

*STUFFED CHICKEN WITH SAFFRON CREAM*
Ingredients:
For the seasoning:
2 teaspoons smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon italian seasoning
1 teaspoon cajun powder
½ teaspoon black pepper
½ teaspoon sazon
½ teaspoon saffron powder
(4) chicken breast (wholesome sizes)
2 tablespoons olive oil
2 tablespoons unsalted butter
2 cups heavy cream
2 cups cream cheese
1 cup fresh spinach (chopped)
1 shallot
½ cup cilantro
½ cup parmesan cheese
Sweet peppers (thinly sliced)
Fresh parsley (for garnish)
(Preheat oven to 425)
1. Prep the chicken:
In a small bowl, combine the seasonings (except the saffron). Coat the chicken with olive oil and seasonings on both sides. Partially cut small divide in chicken. In skillet, heat olive oil and butter over medium heat. Add sliced sweet peppers, chopped cilantro and shallots. After a minute, place chicken breast evenly in skillet. Allow to brown 2-3 minutes on each side. Remove from skillet, set aside. Keep drippings inside skillet for later use!
2. Make the filling:
Combine cream cheese, chopped spinach, sweet peppers and a pinch of seasonings. Add a drizzle of the drippings from skillet (optional). Gently fold together. Stuff each chicken breast to maximize each portion. Bake covered for 20 minutes and remaining 10 minutes uncovered.
3. Make the cream sauce:
Reheat skillet and spatula remaining chicken drippings on medium heat. Add heavy cream and allow to simmer for 2 minutes. Then add butter, saffron and fresh spinach. Vigorously stir in parmesan cheese to avoid any clumping. Adjust temperature to low heat and stir as sauce thickens.
Garnish with fresh parsley.
On the side: Rice and steamed broccoli or pasta. Enjoy!

Last night’s dinner featured slow cooked chicken stew! This is one of those meals perfect for the busy family. Especially on a chilly day!
The night before, I seasoned chicken pieces, added marinade and allowed it to refrigerate overnight.
The next morning, placed all ingredients inside the crockpot, set it to low temperature and went about my day for hours.

Ingredients for (1) pound ground turkey:
Dust onions w/cajun rajun, smoked paprika, brown sugar
(1) tsp each:
adobo
onion powder
garlic powder
season all
sayzon
worchesire
lipton onion (soup mix)

1 tbsp flour
1 tbsp yellow mustard
1/4 black pepper
***********************
Sauce:
(1) cup mayo
(3) tbsp ketchup
(2) tbsp mustard
(2) tbsp relish
(1) tbsp pepperoncini juice
(1) tsp onion powder
(1) tsp garlic powder
(1) tsp white vinegar
(1) tsp white pepper
(1) tsp white sugar
