Hello Everyone. Rice and Beans! This is a recipe you’re probably not familiar with. It's not the Mexican or Caribbean style of making rice and beans. Those are far more easier to make and are equally as delicious. This recipe is a tiny bit more complex, but very much worth it. It's usually eaten as a main course rather than a side dish.
This rice and beans is one of the many variations of the classic West African recipe. It’s a dish I love to make when I need something quick and gourmet. Give it a try when you get the time. Nothing can come between West Africans and their Beans (black-eyed peas) and Fried Plantains. Someone asked me if this was red red… to be frank, I don’t even know what that is. When I looked it up, I noticed it was similar, but no, it’s not the same recipe.

This is an ancient recipe passed down from our forefathers. It’s a dish you’d come home to after that sweet and short football (soccer) game. A dish you’d look forward to, while blistering your thumbs on that Playstation One or two controller... Need For Speed: Underground? Anyone? Soul Reaver? Tekken? Okay, never mind.

It’s is a rich, nutrient dense, beans (or peas) stew with large chunks of sweet potatoes (white, not orange colored) and fried plantains. It starts with a healthy dose of palm oil sourced ethically and sustainably from Mom & Pop farms in West Africa. If you’re not comfortable using palm oil, you can use my Annatto oil. This is a Vegan 🌱 recipe. It's not recommended for Alkaline Vegans.

My only wish is to go back to this night. I dug into this noodle bowl like a rabbit building a home. When I was done eating I took a pause to reflect on what just happened, then I found myself being super grateful for the ability to cook up storms. I'm so grateful... you have no idea. Anyway, the broth was thick, spicy, and very flavorful. Noodles were bouncy and perfectly coated with the broth. Everything just worked out really well and I must say... this is one dish I'm very proud of. I put this idea off for too long, but I'm glad it's finally off my to-do list. You asked for it, you got it! Alkaline Chili Oil. It's packed with flavor and lots of alkaline goodness. You can put this on almost any savory dish. I used peppers imported from the Motherland. Back in the days these peppers weren't so easy to come by in the western world, but nowadays you can easily find them on online. Lucky us! Check out the video when you get the time. Link's below. Wild Moringa latte! So delicious. Cheaper than Ceremonial Matcha latte too. No caffeine either (I still love Coffee). The moringa powder I used was imported from Africa. It tasted really fresh and the flavor was intense. I just made some as I'm about to go for a sweet, sweet drive 🥰 I was so busy this past week, so I wasn't able to go for my weekly leisurely drive. Do you know leisure driving can reduce stress? Roof down, windows down, calming music playing, and the scenery... oh the scenery. Gotta love it. Hey Everyone! I made a huge pot of this stew and it kept me feeling warm and cozy through the past week. The stew is packed with all sorts of assorted mushrooms and veggies. I served it alongside some Quinoa from my latest short video and all I can say is... Wow! As I savored the last spoonful, my lips quivered and a tear rolled down my cheek. I looked into the bowl and all I could see was "Made in China." Not a single drop left. So long stew lol. I should be a fiction author! That didn't happen, but I could see it happening.
