I’m Patricia McCausland-Gallo, also known as Chef Pachi Gallo. I was born in Colombia and raised above my mother’s pastry shop and catering business, where food became my first language of love.
Through my YouTube channel, I share quick tips, fun recipe hacks, and glucose-friendly dishes that make cooking joyful, simple, and nourishing for everyone.
Whether I’m batch-cooking pulled chicken, crafting ancient-grain arepas, or blending a 30-second pesto, I aim to make every meal a celebration of love, legacy, and wellness.
From authoring the Official Encanto Cookbook for Disney and Williams-Sonoma to sharing the power of food and nutrition on stage at Stanford, my work bridges flavor and function, tradition and innovation.
