Olive oil
Leek
Onion
Carrots
Parsnip
Turnip
Celery root
Yellow potatoes
Golden beets
Garlic
Rosemary
Veg broth/vegan broth bouillon
(Salt, pepper,oregano, ranch seasoning)
Avacado
Kite hill chive cream cheese
450 roast for 30-45 minutes
Let sit and cool down then blend until your desired creaminess β€οΈ π©βπ³

I used-
Carrots
Parsnips
Tomatoes
Golden beets
Sweet potatoes
Onion
Garlic
Zucchini/summer squash
Butternut squash
Veg broth
Avacado
Olive oil(2 tbsp mixed veggies up in it before roasting)
And vegan cream cheese for creamy texture/flavor!
Salt, pepper, and savory seasoning
Roast veggies at 450Β° for 30/45 mins
Blend until desired consistency. (Helpful tip- wait for veggies to cool down a bit before blending) you can freeze and use it later if you don't eat it right away. It makes a pretty good size batch of soup! Enjoy. π©βπ³ π²
