烤箱一定要预热吗,怎么预热烤箱,预热多久?
我们使用烤箱时,需要提前将烤箱预热到指定温度,这是因为烤箱从开始启动到达到理想温度,需要一定时间,而我们希望食物一放进烤箱,里面的温度就已经是我们要的烤制温度,否则前面烤制时食物都是在低温下烘烤的。具一个例子,食谱中要求蛋糕200°C烤20分钟,如果我没有预热烤箱,或者没有充分预热烤箱,就把食物放进去,那么前面十几分钟,甚至知道20分钟结束,烤箱内部都没有达到200°C, 食物吸收的热量不够,自然无法出现理想的上色效果,甚至可能会烤不熟。
那么烤箱应该如何预热呢?很简单,就是把烤箱温度设置到烤制时所需的温度空烧。直到温度到达设定温度再将食物放进去烤,而不是把食物放进去一同预热。这就如同你用锅子炒菜,要先把锅子烧热,再倒油,放食物进去,而不是把食物放在冷的锅子里再开火。
那么烤箱应该预热多久呢?答案是不确定的。每个烤箱都不同。有的烤箱预热到200°C只需要10分钟,而有的烤箱则需要20多分钟。即便是同一个烤箱,预热到200°C所需的时间,肯定也要比预热到150°C所需的时间要久。那么如何知道烤箱已经预热好了呢?很多烤箱在预热好之后会有指示灯显示,但好多情况下烤箱并不靠谱,温度没到指定温度指示灯就给出了错误的提示。所以最靠谱的方法是将烤箱温度计放在烤箱中央位置,再预热烤箱,等到烤箱温度计的度数到达你设定的温度之后,你就知道烤箱已经预热好了,这时候就可以开始烤制你要做的美食啦。

Do we have to preheat the oven? How do you preheat the oven and how long do you preheat it for?
When we use our oven to bake food, we need to preheat it to our desired temperature. This is because it takes time to heat the oven up to the temperature we set. We want our oven to be at the setting temperature when we put our food in. Otherwise, our food is cooked at a lower than set temperature as the oven gets heated up. For example, the recipe requires you to bake the cake at 200°C(400°F) for 20 minutes. If I do not preheat the oven or do not preheat it enough, the cake will be baked at a lower than 200°C temperature for almost half or even entire baking time. The cake did not get enough heat to cook through, it may look pale or even undercooked.

So how do you preheat the oven? It is very simple. Just let the oven operate without any food in. Put your food in until the oven reaches the desired temperature rather than preheat the oven with the food inside. It is like adding your steak in the pan when the pan is hot enough, rather than heating your pan with the steak inside.

How long do you need to heat the oven? The answer is uncertain because every oven is different. Some may take 10 minutes to preheat to 200°C, and some may take 20 minutes or more. Even for the same oven, preheating it to 200°C takes longer than preheating it to 150°C. How do you know if your oven is ready? Some ovens have indicators that tell you when your oven is ready. However, not all of them are reliable. The best way is to put an oven thermometer in the middle of your oven and then preheat your oven. When the thermometer reads the desired temperature, you know your oven is ready to bake.

打发蛋白要几分钟才能打好?
这个没有确切的答案,因为每个打蛋器的速度都不同,我的打蛋器一共有7档速度,打三颗蛋清到干性发泡,用最快的7档只要两三分钟,而如果全程要4档,则需要10分钟左右。可是我的打蛋器最高速可能只是其他人打蛋器的中速甚至低速,所以我用中速打需要10分钟,可能别人的打蛋器中速只需要两三分钟。
除此之外,打蛋的速度还跟蛋的数量相关,打10颗鸡蛋自然要比2颗鸡蛋用时要长。打到干性发泡自然比湿性发泡用时要长。鸡蛋清的新鲜程度,酸碱程度,温度,都会影响打发所需的时间。
总结:打发时间受打蛋器转速和很多其他因素影响,所以没有确切的参考,判断蛋白打发没打发好应该通过蛋白霜的状态来判断。

How long does it take to whip the egg whites?
There is no definitive answer for that. Because every mixer operates differently. For my hand mixer, there are 7 speed settings. It usually takes me 2-3 minutes to whip the whites to stiff peaks at speed 7, but it takes about 10 minutes at speed 4. Not every mixer has the same setting. The highest speed on one mixer can be equivalent to mid-low speed on another mixer. So it really depends on how fast your mixer operates.
Other than that, whipping 10 eggs is going to take longer than 3 eggs. Stiff peaks takes longer than soft peaks. Other factors include how fresh the eggs are, if you add some acid like lemon juice or vinegar, how cold the egg whites are.
In conclusion, the time it takes to whip egg whites depends on how fast your mixer operates and it is also affected by many other factors. Therefore, judging by the look of the meringue is more important and accurate.
