Ingredients:
• 500g lamb cut into small cubes
• 1/2 cup plain yogurt
• 2 tablespoons lemon juice
• 2 tablespoons ghee or oil
• 2 cloves garlic, minced
• 1 tablespoon ginger paste
• 1 teaspoon cumin powder
• 1 teaspoon coriander powder
• 1 teaspoon garam masala powder
• Salt, to taste
• 10-12 bamboo skewers, soaked in water for 30 minutes
Instructions:
In a large bowl, mix together yogurt, lemon juice, ghee or oil, garlic, ginger paste, cumin powder, coriander powder, garam masala powder, and salt.
2. Add the meat cubes and mix well. Cover and refrigerate for at least 2 hours or overnight.
3. Preheat a grill or grill pan over medium-high heat.
4. Thread the marinated meat onto the skewers, leaving a small space between each piece.
5. Brush the grill or grill pan with oil to prevent sticking.
6. Grill the kebabs for 5-7 minutes per side, or until cooked to your desired level of doneness.
7. Serve hot with your favorite chutney or raita!

Ingredients:
6 ½ (1 ounce) squares semisweet chocolate, finely chopped
½ cup butter, cut into 8 pieces
3 eggs, room temperature
⅓ cup white sugar
2 tablespoons all-purpose flour
4 teaspoons unsweetened cocoa powder
Pinch of salt
Instructions:
Preheat the oven to 400°F (200°C).
Grease and flour four 6-ounce ramekins.
Melt chocolate and butter together.
Beat eggs and sugar until pale and thick.
Combine with melted chocolate, flour, cocoa powder, and salt.

1 medium cauliflower, cut into florets
1 cup all-purpose flour
2 tbsp cornflour
1 tsp red chilli powder (adjust to taste)
1/2 tsp turmeric powder
1 tsp garam masala
1 tbsp ginger-garlic paste
1/2 cup yogurt
Curry leaves
Green chilies, slit
Salt to taste
Oil for frying
Instructions:
Blanch the cauliflower florets in hot water with a pinch of salt for 2-3 minutes, then drain and set aside.
Prepare the batter by mixing the all-purpose flour, cornflour, red chili powder, turmeric powder, garam masala, ginger-garlic paste, yogurt, and salt. Add water as needed to make a thick batter.
Coat the cauliflower florets in the batter and let them marinate for about 10-15 minutes.
Deep fry the coated florets in hot oil until they are golden and crispy. Drain on paper towels.
In a separate pan, heat a little oil and temper with curry leaves and green chilies for a few seconds.
Toss the fried cauliflower in this tempering and serve hot.
