Y’all, I used to stress every evening about what to pack my kid for lunch the next day. Then it hit me that he’d probably be fine with the same lunch every day, as long as he got to pick what the items were.
We always do 4 items, and I always have him choose a protein, a fruit, a veggie, and “something crunchy.” That formula seems to always produce a filling, medium-healthy lunch.
Packing these 4 lunches took approx 10 minutes, and now we are set for the week! He requested: veggie dogs, grape tomatoes, blueberries, and mini pretzels. We also throw in a flavored seltzer, which makes him feel super fancy.

The trumpet mushroom “scallops” at Blossom in NYC were garlicky heaven. They came on a bed of sautéed spinach and creamy polenta!

Well, my kid and I both caught colds at Disney. This heart of palm chowder from Proper & Wild was just what my body needed! It’s giving me Ideas, because that heart of palm texture was PERFECT.
