Finished up yesterday’s boil with 137 oz of syrup. Sugar content of the sap this year is higher, which we are thankful for.

New stove modifications have the boil rate at 5 gallons per hour! That is double the previous rate and such a time saver on these large batches.

Saturday’s boil got finished yesterday: 41.5 gallons down to 100 ounces. Vacuum filter still helping me bottle clear syrup, consistently.
