These are the silicone trays I use to dehydrate tomatoes. I usually do between 2 and 5 trays at a time to make the most out of running the dehydrator. These tomatoes are from two San Marzano plants. They are prolific producers and at the end of Summer into Fall I have to keep up with processing them so they don’t go to waste. Preserving food can sometimes come across as a tedious task but it’s well worth it to enjoy fresh produce for months. San Marzanos will grow and produce well in containers as long as you support them vertically so the branches can handle the huge bundles of tomatoes that can have up to 10 tomatoes! They really are fantastic for everything including sauce and salads. Let me know if you’ve grown them before or will consider trying to grow them in the near future! 💚

The end of tomato growing season approaches with reckless abandon and I find myself so grateful for this bounty and exploring different ways of preserving them. So far I’ve frozen, dried some and also made sauce. San Marzanos are by far my favorite variety but purple Cherokees are definitely a close second. What’s your favorite tomato variety to eat and grow?
