Kani Salad is a delicious Japanese seafood salad brimming with contrasting textures, tastes, and colors. Although it's known as Kani Salad in the West, the imitation crab meat used to make the dish is called kanikama in Japanese, so in Japan, the dish is known as Kanikama Sarada (カニカマ サラダ).

One food form factor I really enjoy is the dumpling. In my culinary travels I’ve come across a myriad of versions, every one of them impressive in their own way. Nokedli are a beautiful freeform pasta that accompanies Chicken Paprikash, but they also make a delicious side dish to any roast or stew. And if you like spicy, these Chinese Wontons in Chili Oil will fire up your appetite, especially if you take the time to make my Homemade Chili Oil. Of course, Japan has its famous versions of the dumpling, and I have recipes for Gyoza, Siu Mai, and even Mitarashi Dango. As the weather warms up and we approach Summer, my tastes turn to cool, refreshing salads that get you out of the kitchen quickly. Some of these salads are easy to prepare ahead, which makes mealtime easy. Kani Salad is a quick and tasty fix. Creamy Sesame Dressing poured over any combination of vegetables you like makes a wonderfully nutty side, or add chopped cooked chicken or tofu to make it a meal. I'm not going to be able to make the premier tonight, but I DO have a new video to share! It's a rolled omelette called Dashimaki Tamago that's made with a high ratio of dashi stock to egg. This gives it a tender juicy texture and it's one of my favorite comfort foods. I show techniques to make it in both a Tamagoyaki pan as well as a regular frying pan and it can be made with just a handful of ingredients (eggs, dashi, potato starch, soy sauce, and salt). Although it has international roots, Japanese Curry is one of Japan's most popular home-cooked meals. Most people use bricks of instant roux, but I make mine from scratch.
