There's no doubt that making these yeasted flatbreads takes a bit of time but it's worth it to me. Why?
- with a bit of help from my mixer, there's not much 'hands on time' til they get to cooking stage
- when I've got the time, just cutting, rolling and dry frying these flatbreads feels really calming. Not all meditation is done on a cushion ๐
- I'm feeling so tired today and this is something I CAN do. It makes me feel like I've achieved something.
- making them myself means no added nasties or UPFs and I adapted the recipe to be 50:50 white to wholemeal flour so a bit of a health boost along the way
- I now have 12 of these beauties and they freeze so well. No more worries about lunch for a while.
- they're so flexible. Apart from the obvious gyro style wraps, I can throw on some garlic butter for quick garlic bread, add tomato sauce and mozarella for a pizza vibe and butter them up for a quick naan bread substitute.
Yep, I love these flatbreads. And I've just eaten one with some chicken breast, mixed salad, red onion and sriracha mayo. So good! So that's 11 ๐

Life's still a bit hectic here so apologies (again) for being so quiet. I hope you're keeping well? I've been meaning to share a little tip that's helping me manage this busy season. I don't know about you, but I find healthy veggies are the first things to slip when life get's busy for me, so I've started a weekly ritual of prepping a load of veg - onions, peppers, courgettes and whatever's in the fridge - and roasting them up with a little olive oil in the air fryer. They're fine in the fridge for 3-4 days and I can easily throw them into sandwiches, salads, or even whip up a quick breakfast taco ๐ฎ . It's really working for me so I thought I'd share the love.

I used to think meal prep was all about having 7 identical boxes of 'something with rice' lined up in the fridge. Now I realise that, for me, it's all about having a selection of things I can mix and match in the fridge and having at least one 'ready to heat' meal in the freezer for those tough days. I love frittata for these hot summer days.ย

For this 'leftover pie' for two, I roasted up some butternut squash in the versazone air fryer, then mixed it with some leftover cooked veggies, sage and creme fraiche and popped some filo pastry sheets on top. About 12 minutes later (and with a bit of 0-minute broccoli on the side) we had dinner on the table. Low stress, low waste, and super comforting for these cold UK June days. What's your favourite mid-week meal right now?
If you're in the UK (21 May) , I just heard that Instant Pot have some deals on today for various air-fryers. You can see them on the link below. I don't have any of these but I do have the plain black versazone model without 'clear cook' function and I love it. Big, but super flexible as you can cook in it as one tray or separate into two with different temps and cook times. I'll review it soon!
