This was our Brunch at Stella’s. It was absolutely delicious. First time I ever had French press coffee. Of course y’all know me I had to try out two brunch items. The flat bread was amazing and the banana French toast was beyond scrumptious. The gumbo was also good. The homemade hot sauce they made it what put it over the top.

Ingredients:
2 cucumbers, sliced
1/4 cup shredded cheese (cheddar or your favorite)
2 tbsp bacon bits
A pinch of black pepper
A sprinkle of Old Bay seasoning
A dash of Salad Supreme seasoning
2 tbsp avocado lime ranch dressing
Directions:
Slice the cucumbers into bite-sized pieces and place them in a bowl.
Add shredded cheese, bacon bits, and seasonings (pepper, Old Bay, Salad Supreme).
Drizzle the avocado lime ranch dressing over the mix.
Stir everything together until evenly coated.

• Pour in vegetable broth (or chicken broth) and bring to a simmer.
• Add the broccoli florets, cover, and let cook for 8–10 minutes, stirring occasionally.

• Once the orzo is tender and the liquid is mostly absorbed, reduce the heat to low.
• Stir in heavy cream, Parmesan cheese, butter, salt, and black pepper.
• Mix well until the cheese melts and the sauce becomes creamy.

Chipotle Chicken Chopped Salad (with copycat Chipotle Vinaigrette!) - FULL recipe below. A fabulous lineup of taco-spiced seared chicken, black beans, and all the colorful, crunchy veggies tossed in a bold, spicy dressing. Add it to your meal prep lineup for a filling, flavor-packed lunch.
SALAD
1 lb. boneless, skinless chicken thighs or breasts
2 Tbsp. taco seasoning (I use @sietefoods brand)
2 Tbsp. extra-virgin olive oil
4 to 6 cups chopped or shaved red cabbage
1 red bell pepper, diced
1 cup frozen fire-roasted corn, thawed
1 (15-oz.) can black beans, drained and rinsed
½ cup crumbed cotija or queso fresco
½ cup roughly chopped cilantro
1 ripe avocado, cubed
For serving: tortilla chips (crushed overtop or used as scoopers to eat salad)
COPYCAT CHIPOTLE VINAIGRETTE
½ cup avocado oil (I use @chosenfoods brand)
¼ cup red wine vinegar
2 Tbsp. honey
1 chipotle chili pepper (from a can of chipotle peppers in adodo sauce)*
1 garlic clove
½ tsp. dried oregano
½ tsp. ground cumin
½ tsp. kosher salt
¼ tsp. black pepper
*Note: as written, the dressing is on the spicier side. For less heat, use ½ chipotle pepper.
Place chicken in a bowl and toss with taco seasoning and olive oil. Heat a large skillet or sauté pan over medium heat. Arrange chicken in pan and cook, undisturbed, for 5 minutes. Flip, and cook another 4 to 5 minutes, depending on thickness, until cooked through. Transfer to a plate and allow to slightly cool.
Prepare vinaigrette by combining all ingredients in a blender or immersion blender. Blend until smooth.
To a large bowl, combine cabbage, bell pepper, corn, black beans, cheese, avocado, and cilantro. Cut chicken into small pieces and add to bowl. Pour dressing overtop and toss well to combine. Serve with crumbled tortilla chips overtop, or use chips to scoop up bites of salad.

Classic Greek Salad Recipe
Ingredients:
Dressing:
¼ cup extra-virgin olive oil
3 tbsp red wine vinegar
1 garlic clove, minced
½ tsp dried oregano (plus more for sprinkling)
¼ tsp Dijon mustard
¼ tsp sea salt
Freshly ground black pepper
For the Salad:
1 English cucumber, cut lengthwise, seeded, and sliced ¼-inch thick
1 green bell pepper, chopped into 1-inch pieces
2 cups halved cherry tomatoes
5 oz feta cheese, cut into ½-inch cubes
⅓ cup thinly sliced red onion
⅓ cup pitted Kalamata olives
⅓ cup fresh mint leaves
Directions:
In a small bowl, whisk together olive oil, red wine vinegar, garlic, oregano, Dijon mustard, salt, and pepper.
Arrange cucumber, green pepper, cherry tomatoes, feta cheese, red onion, and olives on a large platter.
Drizzle dressing over the salad and gently toss to combine.
Sprinkle with oregano and top with fresh mint leaves.
Season to taste and serve.

1 teaspoon baking powder

½ cup butter, softened
½ cup sugar
½ cup brown sugar
3 large eggs
1 teaspoon vanilla extract
1 cup shredded carrots
For the Cream Cheese Frosting:
8 ounces cream cheese, softened
4 tablespoons butter, softened
1 teaspoon vanilla extract
4 cups powdered sugar
Directions:
Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking pan.
In a medium bowl, whisk together the flour, cinnamon, baking soda, baking powder, salt, ginger, and nutmeg.
In a large bowl, beat the butter, sugar, and brown sugar until light and fluffy.
Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
Gradually mix the dry ingredients into the wet ingredients, stirring just until combined.
