I grew up in the small city of Oneonta, NY where mom and pop pizzerias were everywhere. My favorites were Ruffino's, Sal's, Mama Nina's, and Tino's (origin of cold-cheese pizza).
When I moved away in my early 20's, I was never able to find pizza I enjoyed the same way, so I decided to learn to make it myself. While nothing will ever bring me the same pleasure as a fresh slice from one of my childhood favorites, the pizza I've learned to make over the last 25 years is pretty darned good!
The best part is that it's fairly easy to make amazing pizza in any old kitchen oven as long as you have a stone or a steel.
