When making dosas for 2 boys from IT,
I never knew it was going to change my life. Forever.

2002.

For a chef working at The Leela, Bangalore, boxed up inside a hot, busy kitchen, new faces were always a relief.

I think it was at this point that I had late-night regulars in my kitchen: including a couple of Malayali boys from the IT department: Vinod and Shabeer.
They told me that my food reminded them of home, and funnily enough, was THEIR relief during night shifts.

During all the dosas at 4 in the morning, we quickly became friends and grew close.

In one of the conversations, I told them about my dream to work in the U.K. and how I’ve always wanted to explore different cuisines. I was also honest about the fact that I did not know how to apply or approach the problem at hand - or the fact that I did not even have a CV.

That conversation ended and I moved on (or that’s what I thought).

Christmas 2004.
2 years had passed, and I was now at Kumarokom.
I was also a newly-wed at this point.

On one of the most hectic days of the year, I get a call in the middle of service:
“Hello, this is Camellia Panjabi. Is this Suresh?”

In the next hour, she asked me if I would like to come down to Mumbai for a job interview in the UK.

For Suresh, just starting his career, Camellia Panjabi had just given him tickers to his dream - but he had no clue who she was or the enormity of what had just happened!

I said yes, and she had a specific ask: to bring Appam batter, Raw mangoes and native Puli (tamarind).

It was only when I spoke to my manager that I realised how big of a name Camellia Panjabi was, and the gravity of the opportunity I had just gotten.

But I still did not know HOW this call happened.

Well, remember my IT boys?
After listening to my dreams of working in the U.K., they made an entire resume for me and sent it to a long list of restaurants and groups - eventually ending up in Camellia’s hands!❤

That trip to Mumbai changed my life forever,
all because I fed 2 boys from IT dosas that reminded them of home.
