材料:
花甲半斤
雞蛋3隻
蔥花
處理:
1. 大火煲滾1鑊水,放花甲出水至殼打開,熄火。
2. 花甲,小心用清水沖洗乾淨。
3. 雞蛋,打在杯內,打勻,加入1份半清水,打勻。
烹調:
1. 放碟在鑊內,大火煲滾1鑊水。
2. 過濾大約2/3份量的蛋漿在碟上,冚蓋,留有少許罅隙,大火蒸4分鐘。
3. 花甲,逐隻插好在水蛋內,過濾剩下的蛋漿在碟上,再蒸2分鐘。
4. 完成,放蔥花,可享用。

Ingredients:
Clams 0.5 catty
Eggs 3 Nos.
Green onion cubes
Preparation:
1. Heat up a wok of water at high flame. Soak the clams until shells are open. Turn off fire.
2. Clams, rinse with tap water carefully.
3. Eggs, break in a glass. Beat well. Add in 1.5 shares of tap water. Beat well.
Steps:
1. Put a plate in wok. Heat up a wok of water at high flame.
2. Filter 2/3 volume of egg syrup in plate. Cover up the wok but leave a gap in~between. Steam at high flame for 4 minutes.
3. Clams, put in eggs one by one, filter the remaining egg syrup in plate. Steam for 2 more minutes.
4. Complete. Put green onion on top. Serve.

材料:
節瓜2個
鹹蛋2隻
豬肉4兩
薑一小舊
杞子20粒
處理:
1. 豬肉,清水洗乾淨,擎乾水。
2. 鹹蛋,刮去灰,清水洗乾淨,預先烚熟。
3. 豬肉,廚紙索乾,切薄片。
4. 豬肉,加入調味料:
a. 生粉半茶匙
b. 油一茶匙
c. 胡椒粉適量
d. 鹽1/8茶匙
撈勻。
5. 節瓜,去皮,切去椗,清水洗乾淨。
6. 薑,清水洗乾淨。
7. 節瓜,打直一開二,打橫切薄片。
8. 薑,拍鬆。
9. 鹹蛋,打直一開二,去殼,放碗內。
10. 杞子,清水浸3分鐘。
烹調:
1. 大火在鑊內燒熱油半湯匙。
2. 鹹蛋,大火爆香,轉慢火,切細粒。
3. 加入薑片。
4. 加入適量清水。
5. 加入節瓜,冚蓋,大火滾起。
6. 加入豬肉,大火,冚蓋,滾2分鐘。
7. 加入杞子。
8. 湯,倒入大碗內。
9. 完成,可享用。
Salted eggs pork soup with fuzzy melon
Ingredients:
Fuzzy melon 2 Nos.
Salted eggs 2 Nos.
Pork 4 taels
Ginger (small) 1 No.
Wolfberries 20 Nos.
Preparation:
1. The pork, rinse with tap water. Drain.
2. Salted eggs, remove ashes. Rinse with tap water. Boil well in advance.
3. The pork, dry with kitchen towels. Thinly slice.
4. The pork, add seasoning:
a. Tapioca starch 0.5 tsp
b. Oil 1 tsp
c. Pepper appropriate amount
d. Salt 1/8 tsp
Mix well.
5. The melon, get them peeled. Cut the anchors. Rinse with tap water.
6. Ginger, rinse with tap water.
7. The melon, divide it into 2 shares vertically. Thinly slice horizontally.

9. Salted eggs, divide each into 2 shares vertically. Scoop them out from their shells. Put in a bowl.
10. Wolfberries, soak in tap water for 3 minutes.
Steps:
1. Heat up 0.5 tbsp of oil at high flame in wok.
2. Salted eggs, fry well at high flame. Turn to low flame. Dice in small cubes.
3. Add in ginger slices.
4. Add in appropriate amount of water.
5. Add in fuzzy melon. Cover up the wok. Heat up at high flame.
6. Add in the pork. Cover up the wok. Cook at high flame for 2 minutes.
7. Add in wolfberries.
8. Pour the soup in a big bowl.
9. Complete. Serve.

苦瓜炒煎蛋【一按圖片⏬即睇片】
材料:
油苦瓜2條
雞蛋8隻
(無需調味料)
處理:
1. 洗淨苦瓜
2. 苦瓜切頭切尾,刮去囊,切片。
程序(炒滑蛋):
1. 放1湯匙油落鑊燒熱。
2. 放苦瓜,中火炒1分鐘,收中慢火。
3. 打勻雞蛋,倒入苦瓜中,向四面推,反轉蛋餅,熄火,完成,上碟。
程序(煎脆蛋):
1. 放2湯匙油落鑊燒熱。
2. 放苦瓜,鋪平苦瓜,中火煎1分鐘。
3. 打勻雞蛋,倒入苦瓜,轉中慢火。
4. 煎至蛋漿凝固,轉大火準備反蛋。
5. 再轉回中慢火,煎2分鐘。
6. 上碟前,開大火收乾油分,完成,上碟。
苦瓜煎蛋🟩
Stir fry scrambled eggs with bitter melon:🟢
Ingredients:
Bitter melons 2 logs
Eggs 8 Nos.
(No seasonings to be added.)
Preparation:
1. Rinse the bitter melon.
2. Cut both ends of bitter melon and remove seeds. Slice it. at the same time.
Steps:
1. Heat up 1 tbsp oil in wok.
2. Put bitter melon in wok, stir fry for 1 minute, turn to medium~low flame.
3. Beat eggs well, mix with bitter melon, push the egg syrup to the centre of wok. Flip over egg pie, turn off fire, complete. Serve.
Pan fried crispy eggs with bitter melon:
Ingredients:
Bitter melons 2 logs
Eggs 8 Nos.
(No seasonings to be added.)
Steps:
1. Heat up 2 tbsp oil in wok.
2. Flatten bitter melon in wok, fry at medium flame for 1 minute.
3. Beat eggs well, mix with bitter melon, turn to medium~low flame.
4. Egg syrup has been condensed, get prepared to flip over egg pie after turn to high flame.
5. Turn to medium~low flame again, fry for 2 minutes more.
6. Turn to high flame to make sure the oil has been totally absorbed by egg pie. Complete. Serv

材料:
排骨半斤(切粒)
薯仔2個
蒜頭3粒
豆豉20粒
辣椒仔一隻
錫紙
處理:
1. 排骨,清水沖洗乾淨,擎乾水。
2. 豆豉,洗乾淨。
3. 蒜頭,去皮,切碎。
4. 辣椒仔,切粒。
5. 薯仔,去皮,打橫切半吋一舊。
6. 排骨,加入調味料:
a. 生抽半湯匙
b. 蠔油半湯匙
c. 蒜蓉
d. 豆豉
e.辣椒仔
f. 生粉2茶匙
g. 油一茶匙
撈勻。
7. 預備錫紙。
8. 薯仔,放錫紙上。
9. 排骨,放薯仔上。
10. 錫紙,每邊摺兩次。
烹調:
1. 錫紙包,中慢火,放鑊內,冚蓋焗12分鐘,熄火,焗3分鐘或以上。
2. 完成,放碟上,打開錫紙,灑上芫荽碎。
3. 可享用。
Baked pork ribs with potatoes with mini wok
Ingredients:
Pork ribs 0.5 catty (in cubes)
Potatoes 2 Nos.
Garlics 3 Nos.
Preserved beans 20 Nos.
Chili 1 No.
Aluminium foil
Preparation:
1. Pork ribs, rinse thoroughly. Drain.
2. Preserved beans, rinse with tap water.
3. Garlics, get them peeled. Chop well.
4. Chili, dice in cubes.
5. Potatoes, get them peeled. Cut in 0.5" per each horizontally.
6. Pork ribs, add seasoning:
a. Light soya sauce 0.5 tbsp
b. Oyster sauce 0.5 tbsp
c. Garlic sauce
d. Preserved beans
e. Chili
f. Tapioca starch 2 tsp
g. Oil 1 tsp
Mix well.
7. Get ready for aluminium foil.
8. Potatoes, put on the foil.
9. Pork ribs, put on potatoes.
10. The foil, fold twice each side well.
Steps:
1. Aluminium pack, medium-low flame, put in a wok. Cover it up and bake for 12 minutes. Turn off fire. Leave it for 3 minutes or more.
2. Complete. Put on plate. Open the foil. Put coriander cubes on top.
3. Serve.

高速煲豉汁蒸【一按圖片⏬即睇片】
材料:
新鮮排骨1磅
秋葵3包
白米1.5膠嘜
處理:
1. 排骨,清水沖洗乾淨,擎乾水,用廚紙索乾。
2. 排骨,加入調味料:
a. 生粉1茶匙
b. 油1茶匙
c. 生抽1茶匙
d.蠔油1茶匙
e. 糖半茶匙
f. 辣椒仔1隻(切粒)
g. 豆豉1茶匙
h. 蒜蓉1茶匙
醃1晚。
烹調:
1. 在高速煲內,加入白米,清洗乾淨。
2. 排骨,放碟上,放入高速煲內與飯一齊煮,需時約20分鐘。
3. 飯及排骨已煮好。
4. 秋葵,放煲內,加入:
a. 鹽半茶匙
b. 油3/4湯匙
加入清水至8成滿,煮3分鐘。
5. 秋葵已煮好。
6. 所有材料已煮好。
7. 完成,可享用。
Pork ribs with preserved beans rice and poached okra with high speed cooker
Ingredients:
Pork ribs 1 lb
Okra 3 packs
Plain rice 1.5 measure cups
Preparation:
1. Pork ribs, rinse thoroughly. Drain. Dry with kitchen towels.
2. Season the pork:
a. Tapioca starch 1 tsp
b. Oil 1 tsp
c. Light soya sauce 1 tsp
d. Oyster sauce 1 tsp
e. Sugar 0.5 tsp
f. Chili 1 No. (Dice in cubes)
g. Preserved beans 1 tsp
h. Garlics sauce 1 tsp
Season overnight.
Steps:
1. Add in plain rice in high speed cooker. Rinse thoroughly.
2. Pork ribs, put on plate. Cook together with rice in high speed cooker. It takes about 20 minutes' time.
3. Rice and pork ribs have been cooked well.
4. Okra, put in the cooker. Add in:
a. Salt 0.5 tsp
b. Oil 3/4 tbsp
Add in water up to 80% of total volume. Cook for 3 minutes.
5. Okra has been cooked well.
6. All Ingredients have been cooked well.
7. Complete. Serve.
