The first time I made these saucy BBQ sandwiches, Max couldn't believe it wasn't pulled pork.

Magical soy curls are the secret ingredient, and they're pan-fried until crisp and chewy, then slathered in my homemade BBQ sauce for an epic sticky-sweet-smoky barbecue experience. Piled high on toasted buns with coleslaw, tomatoes, and pickles, this is a sandwich you won’t be able to stop eating!

PS: If you live outside of the U.S., instead of soy curls, you can try using TVP or “soya chunks” or your favorite meat replacement.

These Crispy Black Bean Tacos are one of my favorite recipes from this year, and they’re perfect for when you're having major comfort food cravings or entertaining friends.

Tortillas are packed with a super savory bean filling, gooey cheese, and then baked or pan-fried until puffy, golden, and crispy. Pry them open and stuff with pickled onions, chipotle crema or avocado crema, and lettuce for the best-ever taco-quesadilla hybrid experience.

What’s on your summer reading list? Here are some faves I’ve read in the last few months:

▪️The Emperor of Gladness by Ocean Vuong: Some books keep you so engrossed you lose track of time. This is one of them. Read it!

▪️Remainders of the Day by Shaun Bythell: A daily diary of all the customers who come into the author’s secondhand bookstore in Scotland. Think Ricky Gervais humor but PG. A nice light read to pick up from time to time.

▪️Beautiful Country by Qian Julie Wang: A powerful memoir about a child and her parents’ struggles as undocumented immigrants from China, navigating life in NYC in the '90s. It was a constant reminder of the passport privilege I possess.

▪️Stolen by Ann-Helén Laestadius: A poignant, sometimes dark, coming-of-age story about an indigenous girl in Northern Sweden who struggles to defend her family way of life against a backdrop of xenophobia and discrimination, violence, and climate change.

▪️This is How You Lose Her by Junot Díaz: A collection of short stories on love and life written by a Dominican-American narrator who’s witty yet deep, funny yet profound, flawed yet lovable.

PS: I finally made a Good Reads page where I'm adding all the books I've read over the last few years 🤓 www.goodreads.com/nisha_vora

I can’t wait to finally share a project I’ve been working on this year—it's a collab with someone very special 🫶🏽

She's 173 years old. A little gray, but completely timeless. And she’s a born-and-bred New Yorker with impeccable taste.

Any guesses? 🤔

Stay tuned: I’ll be spilling the beans in our next video, this Wednesday, July 23 @ 9 am PT / 12 pm ET / 4 pm GMT.

A few BTS shots of my recent favorites from recipe testing!

1️⃣ Loaded Saucy BBQ Sandwiches. Made these for friends and I received this text in response "That sandwich was everything. The textures! The sauces! The spice! The bun! Perfection."

2️⃣ Slow Roasted Soy Curls in Mango Salsa. Another very fun use for my new fave plant protein, soy curls. They're juicy and meaty with a bit of crispness. Perfect in tacos, bowls, or even served solo.

3️⃣ Vegan Laab. When we backpacked throughout Laos many years ago, laab was my favorite dish. This plant-based spin delivers all the flavors and textures I remember!

I’ll be sharing all these recipes with my newsletter soon! Sign up here (it’s free!): newsletter.rainbowplantlife.com/never-miss-a-recip…

Have you cooked with soy curls before? I’ve fallen in love with them over the past year, and I can’t wait to share what I’ve been learning about how to cook them to make them taste shockingly chicken-esque with the best crisp-chewy texture.

I’ll be sharing a recipe for them in our next video (dropping tomorrow at 9 am PST) and several more recipes over the summer on my website, including these slow-roasted soy curls in charred salsa and these saucy BBQ soy curls. Stay tuned!

A sneak peek at some of the latest recipe testing favorites! Recipe testing days are my absolute favorite (or a tie with recipe development days, where I sit at my computer for hours and research, brainstorm, and ideate new recipes).

Yes, my feet and back hurt at the end of the day from being on my feet in the kitchen for hours, but creating and experimenting in the kitchen is the most fun!

🥪 Epic summer sandwich: coming to YouTube next month!

🥬 Larb-inspired lettuce wraps: testing for a very special project, coming to a video near you in August!

🌰 Sweet & salty cluster granola: we’re working on lots of new breakfast recipes for a separate special project (we have so much to share with you this year!)

🌮 Crispy bean tacos with queso & pickled onions: for the same project in #3!

Have any questions about my recipe testing or development process? Drop them below!

If you need something truly delicious to whip up for brunch this weekend, you can’t go wrong with any of these options.

🍌Banana Pancakes: The perfect use for overripe bananas, these are fluffy, perfectly sweet, and so simple to make.

🥞Best Ever Pancakes: Want more traditional pancakes? The crispy edges + fluffy interior + buttery taste on these will win everyone over.

🇫🇷French Toast: the classic brunch favorite made (undetectably) vegan. Every buttery bite tastes like the French toast you grew up with.

🧇Diner-Style Buttermilk Waffles: Crispy on the outside, fluffy and pillowy on the inside, these are a dream.
