This is Chhurpi – the cheese that can last for 20 years without spoiling. This miraculous cheese hails from the deep recesses of the Himalayas. The story of Chhurpi begins with the yak, a robust animal that provides rich and flavorful milk – the key ingredient in making this unique cheese. The process starts by boiling fresh yak milk. After boiling, the milk is allowed to cool and curdle. The curds are then strained through cloth to remove the whey, leaving behind soft cheese. The soft cheese is kneaded and shaped into blocks or ropes. But this is where the magic happens – the drying process. Chhurpi is dried naturally in the cool mountain air, which can take several weeks.

When dried, Chhurpi becomes hard and develops a chewy texture. Properly dried Chhurpi can remain edible for up to 20 years!

The most important highlight making matsusaka wagyu beef famous and expensive is the very low melting point of its fat. Its marbled fat melts at 12°C, 8°C lower than Kobe beef, to the point where it melts in your hand when you touch it. As soon as we put a slice of meat in our mouth, it melts. Matsusaka beef is rich and buttery, melting right on the tongue, and because its fat's melting point is very low, it cooks faster than other types of beef.
