It's difficult to give correct advice. I've played around with just about every product out there. I've had good luck with soy gel, but there have been times where it didn't seem to work at all. The best advice I can give is to take your time and accept the fact that stripping one table leg could end up taking a couple of days.

Personally I like mcm furniture. Yes. for larger flat surfaces. But usually not for chair arms or table legs, though. There's nothing wrong with veneer. The plywood underneath the veneer is far more stable than solid wood. You can also do cool things with veneer on edges of plywood, like fake mitred corners.
