Hope this helps. Once you're on, when the horse goes right, you tilt the stick left and vice versa. For super spirited horses, like the Arabians, you might get thrown several times. When I mount a wild horse, I pull back on the left analog stick to lean back while pressing X to calm the horse down.

To tame the horse you must hold the stick in the opposite direction it's going. Since it's always going forward you can make taming a lot easier by keeping the stick held back. Yeah, don't click/press L3, pull it down towards you. When the horse turns to its right, roll L3 to the down-left position.

You can't sell any horse. Wild Horses in Online are Decoration - that's about it. Online wild horses are only helpful as an extra ride if all you have is Scrawny Nag : ( Online sucks that way. I wish they'd made it so you could tame a wild horse, but wild horses were only Morgans, Saddlers, and Walkers, or something.

Agree with the new Arabians and Andalusian comments, also have noticed a lot of horses west of Owanjila where the red chestnut Arabian is, including: Appaloosa, Nokota, Saddler, Walker, and sometimes Thoroughbred. Not the easiest terrain for breaking wild horses, but they don't get scared by NPC's riding by or trains, so definitely worth it.

Most of the wild horses I've seen have been things like Morgans and Kentucky Saddlers, i.e. beginner level horses. Perfectly good to capture, tame and sell for a few dollars, but not likely to become your new ride. If there is a new horse related role at some point (let's hope) that might give you the opportunity to track and tame better
