It's more so a term to separate this form writing and posting fanfic from another common type: ie where the author is continuously writing and posting chapters. A one-shot is "one and done". It stands alone. It's complete as is.

One-shots are quick snippets of those things. Step 1. Figure out what your ending is first, and write until you get to that point, then stop. Then go back and ask yourself if each scene is necessary to get to the end point. Not whether it's a cute / cool idea, but whether the story would make sense if you cut it.
