Conclusion: Latest iPhone 5 iOS caused of all my iPhone 14 Pro WiFi password forgetting problems. I deleted, to the best of my ability, all memory of the two problematic WiFi networks from all six of my Apple devices, then disabled Keychain Sync on all six, and finally re-enabled Keychain Sync on all six.
