I've offset my panel to the side, so that when my SUP is on my roof racks the whole panel isn't covered. Clean up the fiberglass with acetone (or similar solvent) specifically where the panel feet are going to contact the roof.

It works great in the full sun, the 800watts of solar can just barely keep up with the 500ish watts demanded by a 5,000btu AC unit. For a small truck camper, I would look into the little portable ecoflow AC unit along with a big ecoflow battery/"solar generator" being charged by as much solar as you can cover the roof with.
