So tomorrow is the big day for my first Al Pastor cook. Made the Marinade about a week or two ago and divided it in half and froze it. Some people would say the recipes are different, but that is not easy to prove since each restaurant change the recipe at their own convenience. Pastor are dryer than (fried) adobada because of the way of cooking. In addition to the comment above, Pastor typically has pineapple in the taco. Adobabda does not.

Make the adobada tacos. @tony b you can use the paste along with dried chilies to make an adobada sauce to be used on anything, chicken, beef, whatever floats your boat. The sauce is super versatile the hard part is sourcing the ingredients.

Adobada is delicious! Wanted to ask what the yellow item in the middle is. It's shaped like a squash. Its the root/white part of a green onion thats sauteed, hence the color. My mom makes these and people call it al pastor.
