Today we are excited to share with you the story of a steak. Edith is cutting some Snake River Farms Silver Grade Strip Steaks. Wagyu is beef that originated in Japan. The breed of beef is also called Tajima/Tajiri. Snake River Farms with a bull named Fukutsuru who came from Japan to Boise Idaho to begin a Tajimi cross we call American Wagyu. The Wagyu marbleling (or fat inside the meat) is off the charts of the USDA grading scale for beef. That’s why Snake River Farms have silver, black and gold levels for marbling. The Tajimi cattle were used as draft animals for many centuries and only harvested for their meat in the last 200 years. The traditional way to process and eat wagyu is different than the way we do in the USA. Teppanyaki, Sukiyaki, Yakiniku and Shabu Shabu are different ways the Japanese enjoy eating the deliciously marbled Wagyu Beef. A5 Kobe is the top of the charts Wagyu in Japan and very expensive. I was reading that SRF is the only ranch that has 100 % Japanese cows that the owner bought from Japan brought here to America to his Ranch then a couple years after that Japanese band any wagyu cattle are genetics from Coming to America.
